The Cordony Kitchen's spaghetti bolognese recipe
Make your meal more memorable with this tasty spaghetti bolognese prepared by Amanda Cordony of The Cordony Kitchen. Her recipes are always simple, easy to both shop and prepare, and most importantly, ideal for the Australian climate.
Here, she details how to make the perfect spaghetti bolognese. It's a recipe that'll have you whipping up, not just a hearty and filling meal, but one with a good kick of nostalgia too. After all, it's her mum's recipe which means it'll be full of both love and flavour.
spaghetti bolognese
Serves 6-8
Prep: 20 minutes
Cooking: 1 hour 10 mins
ingredients
- 1 tablespoon olive oil
- 1kg lean beef mince
- 1 brown onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon mild curry powder
- 1 teaspoon mixed spice
- 1 teaspoon cinnamon
- 1/2 teaspoon sweetener/sugar
- 1 tablespoon tomato paste
- 1 cup (250ml) red wine, such as shiraz
- 800ml tomato passata
- 1 tablespoon butter (optional)
To serve
- Pasta such as spaghetti or penne
- Parmesan
- Chilli flakes (optional)
method
- Place olive oil in a large pot over medium heat. Brown mince, about 5 minutes, then remove to a bowl. Set aside.
Reduce stove temperature to low-medium. In the same pot, add onion and a pinch
of salt and cook until softened, about 4-5 minutes. Add garlic, all spice powders, sweetener/sugar and tomato paste.
Cook for a further 1-2 minutes.
- Add red wine and simmer for 5 minutes or until mixture has thickened (this will cook off the alcohol). Add tomato passata, 1L water and 1 teaspoon salt. Stir to combine, bring to a light simmer. Stir mince back into the sauce, stir, and continue to simmer on low heat for 50-60 minutes, stirring regularly. Add up to 100ml of water extra in the last 10 minutes of cooking if sauce becomes too thick for your liking.
Remove from heat, check seasoning and adjust if needed. Stir butter through, if using. Serve with cooked pasta, parmesan
and chilli flakes.
