Nasi Kebuli: A Flavorful Indonesian Dish
Ingredients:
- 2 cups basmati rice
- 500g lamb or chicken, cut into pieces
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric powder
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 1 bay leaf
- 1 cup yogurt
- 1 cup chicken or lamb broth
- Salt and pepper to taste
- Oil for frying
Directions:
- Wash the rice thoroughly and soak it in water for 30 minutes.
- In a large pot, heat oil and sauté the chopped onion and minced garlic until fragrant.
- Add the lamb or chicken pieces and brown them on all sides.
- Stir in the ground cumin, ground coriander, turmeric powder, cinnamon stick, cardamom pods, cloves, and bay leaf.
- Add the soaked rice and mix well.
- Pour in the yogurt and chicken or lamb broth. Season with salt and pepper.
- Cover the pot and cook on low heat until the rice is tender and the meat is cooked through.
- Remove the cinnamon stick, cardamom pods, cloves, and bay leaf.
- Fluff the rice with a fork and serve hot.
