Ingredients:

  • 2 cups basmati rice
  • 500g lamb or chicken, cut into pieces
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 bay leaf
  • 1 cup yogurt
  • 1 cup chicken or lamb broth
  • Salt and pepper to taste
  • Oil for frying

Directions:

  • Wash the rice thoroughly and soak it in water for 30 minutes.
  • In a large pot, heat oil and sauté the chopped onion and minced garlic until fragrant.
  • Add the lamb or chicken pieces and brown them on all sides.
  • Stir in the ground cumin, ground coriander, turmeric powder, cinnamon stick, cardamom pods, cloves, and bay leaf.
  • Add the soaked rice and mix well.
  • Pour in the yogurt and chicken or lamb broth. Season with salt and pepper.
  • Cover the pot and cook on low heat until the rice is tender and the meat is cooked through.
  • Remove the cinnamon stick, cardamom pods, cloves, and bay leaf.
  • Fluff the rice with a fork and serve hot.
